We buy three lots a year, and we buy all of each one.

Every coffee here comes from a farm we have bought from before, at a price the farm names. Nothing is blended. When a lot runs out, the shelf stays empty until the next harvest, and we would rather it stayed empty than fill it with something we would not drink ourselves.

Roasting

Two roast days a week, and no third.

We roast on Tuesday and Thursday, one origin at a time, on a drum that has been in this room since 2019. Orders ship within 48 hours of the roast. That is the only freshness claim we make, and it is the only one worth making.
