Three coffees, sourced to be roasted often.

The menu stays at three on purpose: a washed Ethiopian, a washed Colombian, and a wet-hulled Sumatran. Each is bought to a spec we can repeat, so every batch lands where the last one did.

We buy for clarity, not for a story. What you get is the origin, the process, and the roast, stated plainly.

Roasted twice a week, to a repeatable curve.

Green coffee is roasted in small batches on a drum roaster every Tuesday and Thursday. Each batch follows the same four marks, so the cup is a decision, not an accident.

  1. 01 Source Green coffee bought to a fixed spec — origin, process, elevation.
  2. 02 Roast Small batches, Tuesday and Thursday, held to the same curve.
  3. 03 Rest Beans degas before they go out, so the first cup pours clean.
  4. 04 Ship Bagged and shipped within 48 hours of the roast.
