First Crack began with one drum, a scale, and a notebook on Foundry Lane. The notebook has outlasted almost everything else in the room. Every batch since the first has been weighed in, timed, and written down, and the writing down is not ceremony — it is the only way we know what a coffee did the last time we asked it this question.
We buy three lots and no more, because three is what two people can taste properly every week. We roast on Tuesday and Thursday, cup what came off the drum on Saturday morning with whoever walks in, and ship inside forty-eight hours so the coffee arrives while its roast date still means something.
Nothing here is styled to look old. The bags are unlabeled until the day they are filled, the shelves hold what the room needs and nothing it does not, and the coffee is asked to be the only interesting thing on the table.
