Where the coffee comes from

We buy three lots a year and nothing else. Each one is cupped before it is bought, then bought whole — no blending down, no filler, no house blend to hide a bad harvest in.

Green coffee arrives at 412 Foundry Lane in Portland and waits. It is roasted on Tuesday and Thursday, in the quantity that was ordered, and it leaves the building within 48 hours of the drop. Nothing sits on a shelf for a month waiting to be sold.

stages

The roast

Charge Green coffee drops into a drum already at temperature. The heat starts here.
First crack The beans split audibly. From that sound on, every second changes the cup.
Drop Out of the drum, into the cooling tray, stirred until cold. Bagged the same day.
